Sambusa I Waraqi (Meat Sambusa)

The sambusa i waraqi is a traditional recipe from Tajikistan. This cooking recipe is a delicacy and is prepared at festive occasions and during the Holy Month of Ramadan. The recipe traditionally uses meat for stuffing. It is a good source of energy and is quite simple to cook. 

Serving Size: 6-7   
Preparation Time: 10-15 minutes

Ingredients: 

For Filling: 

•1 Cup Minced Meat (Lamb)
•1 Cup Onions
•¼ Cup Black Pepper
•¼ Cup Ground Cumin
•⅛ Cup Sesame seeds
•Salt to taste
•1 Egg (for glazing)

For Dough: 

•1 cup All-Purpose flour
•⅛ Cup Oil
•⅟₂ Cup Water (or as required to make the dough)

Preparation :


  1. Mix an equal amount of onions and minced meat in a bowl with spices. Keep this aside for filling, 
  2. Knead the flour, salt, and warm water to prepare a dough. Let it rest for about 15- 
  3. 20minutes before use. 
  4. Take the dough and roll it flat with the help of a rolling pin. 
  5. Apply cooking oil or animal’s fat over the entire length and breadth of the flattened dough. 
  6. Slowly and carefully roll up the flattened dough in a tunnel-like shape, and then swivel it round and round. Let it rest for another 10-15minutes. 
  7. Cut small pieces of this swiveled and rolled dough. Press each of these pieces inwards, and roll it flat.
  8. Fill the filling with a spoon or hand, and seal the edges by pressing them together in the form of a triangular. 
  9. Prepare an egg wash with 1 egg. Glaze the sambusa with a coat of egg wash, and sprinkle sesame seeds on it. 
  10. Bake the sambusa. 
  11. Serve it hot.
